SAN ANTONIO -- The Culinary Institute of America will be offering a series of professional development courses dedicated to Latin American cuisines this spring at its new campus here. The first such courses will be "Regional Mexican Cuisine: Puebla and Oaxaca," March 31-April 4, and "Mexico's Corn Kitchen," April 7-11.
