Ray Decker is the manager for the [Upstairs] at The Kitchen. Ray oversees all service and staffing for the [Upstairs] and is studying to become a Second Level Certified Sommelier from the International Sommelier Guild. He is also a Certified First Level Sommelier in the Court of Master Sommeliers. Ray Decker's restaurant career began when he was only five years old. Growing up in New Jersey over his family owned seafood restaurant, The Holy Mackeral, Ray remembers traveling into Manhattan's Fulton Fish Market with his father to pick up their seafood for the day. Ray continued working at The Holy Mackeral until he was twenty, when he headed to the Marine Corps. It didn't take long for Ray to realize where his heart remained, and headed back to the East Coast to join Houstons Restaurant. Ray's most recent addition to [Upstairs] is the expansion of a beer list that now includes 45 different selections, ranging from Colorado micro-brews to handcrafted Belgian ales. Many of the beers have flavor profiles that are appropriate for paring and make the [Upstairs] beer list among the most intriguing in the state.

Dakota Soifer is our [Upstairs] chef. He designs the [Upstairs] menu and prepares each dish with incredible passion. He has brought a new level of energy and enthusiasm to The Kitchen. Dakota Soifer graduated with a bachelor of Architecture degree from CU, and dabbled in the kitchen of some of Dave Query's restaurants throughout his time in Boulder. It was in San Francisco that Dakota's culinary career really took off. He learned how to master the mesquite grill and wood oven at Judy Rodger's, Zuni Cafe. Dakota soon moved slightly north near Napa and worked as the executive chef at Dean and Deluca. Dakota's last job before joining our kitchen was in Napa at Julia's Kitchen. There was three acres of herbs and produce gardens on site and he was learning under chef Victor Scargle, a James Beard Nominee. While Dakota's love of cooking grew, he missed climbing and having the mountains at his doorstep. He found his way back to Boulder and into The Kitchen.

Nathan is The Kitchen's Pastry Chef. In addition to making the desserts at The Kitchen, Nathan's talents include making chocolate and baking and styling wedding cakes. Nathan Miller grew up in Marysville, Pennsylvania, where he relentlessly messed around in the kitchen concocting new recipes. Just after high school, Nathan received a scholarship to move to Germany to study the art of pastry. Upon his return, Nathan knew that he wanted to learn more so he headed back to Germany, moving on to the Alsace region, and then eventually to New York City for his next opportunity. It didn't take long for Manhattan's top restaurants to accept Nathan into their kitchens. In the four years that Nathan lived in New York, he worked at Danube, NL, Jean Georges, and Aureole. But the 90-hour work weeks and stresses of New York City urged Nathan to move once more and try something new. Boulder, Colorado seemed like a far stretch from Manhattan, but with its growing reputation as a culinary hot spot due in large part to restaurants such as The Kitchen, it's easy for him to feel right at home.
